Souping for Cooler Weather

Soup is a great option when the weather starts to get cooler. It can help raise your internal body temperature, is a relaxing main or side dish, and soothes the soul. 

This recipe, much like the other dishes in Power Souping, is filled with fibrous, nutrient-dense, whole ingredients that you can eat while staying satisfied. 

What are Mung Beans? 

What are mung beans? They’re kind of like lentils: quick-cooking with a flavorful, nutty taste. But don’t let their delicate flavor mask their mighty mung health potentials – these babies are full of all-important protein, fiber, and folate. Plus, they’re packed with phytochemicals that may help protect your cells from damage. Enlighten your taste buds with every spoonful. And since they are healthy and filling, they go great in soups and salads. Hence, why we’re sharing this recipe with you.

Zensational: Mung Bean Soup

This quick recipe takes only about 15 minutes of active cooking, and then another 30-35 minutes to let the soup simmer. All in all, it’s a simple crowd-pleaser!

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Yellow Onion (chopped)
  •  2 ½ cups Mung Beans (dried)
  • 1 tsp Vegitude Power Spice Blend 
  • 2 stalks celery (chopped)
  • 1 carrot (chopped)
  • 12 cups Vegetable Broth
  • 4 cups green cabbage (chopped)
  • 2 Roma tomatoes (chopped)
  • Salt and pepper to taste

Steps

  1. Heat the oil in a large pot over medium heat. Add the onion and saute until softened, about 3 to 5 minutes. Then add the mung beans and saute for an additional 2 minutes. 
  2. Add power spicing blend, celery, green beans, and carrot. Saute for 3 to 5 minutes. Add in the vegetable broth, bring to a boil, and allow to simmer for 30 minutes. 
  3. Stir in the cabbage and tomatoes, then simmer for an additional 5-10 minutes. The cabbage should remain crunchy. 
  4. Season with salt and pepper to taste. 

 Serves 8
