Spiced AM Tofu Scramble

Fiberized AM Tofu Scramble

Makes: 2 servings

Vegan, Gluten-free

Ingredients:

  • 1 package firm tofu (organic and sprouted), strained
  • 1 teaspoon extra-virgin olive oil
  • 2 cup low-starch veggies of choice (i.e. bell peppers, onion, tomatoes)
  • 1 garlic clove, minced
  • ¼ teaspoon Vegitude blend
  • ½ teaspoon Savory Sizzle blend
  • Sea salt and pepper, to taste
  • ½ avocado, sliced
  • 1 cup mixed berries

Directions:

  1. In a skillet, heat the oil over medium high. Saute garlic until it is tender and fragrant. Add the veggies and cook until tender for about 2 to 3 minutes. Add the tofu, Vegitude, and Savory Sizzle and scramble using a spatula for about 2 minutes. Add salt and pepper to taste.
  2. Remove from heat, pair with ¼ avocado and ½ berries on the side.
