Vegan, Gluten-free

Ingredients:  

  • 2 large garlic cloves, minced
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon Vegitude Blend
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon raw honey (optional)
  • ¼ cup fresh cilantro, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 3 cups cherry or grape tomatoes
  • 8 cups mushrooms (two 8 ounce packages)
  • Sea salt and pepper, to taste
  • Wood skewers

Directions:

  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine garlic, mustard, Vegitude Blend, oil, honey (if using), cilantro, parsley, and mix thoroughly. Season with salt and pepper to taste.
  3. Skewer the tomatoes and mushrooms alternately, then brush them with the sauce. Bake for 20 minutes.
