Makes: 4 servings
Serving size: about 1 ½ cups, cooked
Vegan, Gluten-free


  • 8 cups seasonal vegetables of choice (green beans, carrots, cauliflower, broccoli, etc.)
  • 2 tablespoons olive oil
  • 1 teaspoon Vegitude Blend
  • Sea salt to taste


  1. Preheat oven to 400 degrees.
  2. Clean and cut vegetables to desired shape around the same size.
  3. Toss vegetables in the olive oil, Vegitude Blend, and a touch of sea salt.
  4. Place vegetables on a parchment lined baking sheet and bake for about 25-35 minutes, shaking the pan at least twice during the roasting time.  Roast until the veggies are tender and nicely roasted.
